Parsnip

Parsnips are believed to be native to the eastern Mediterranean area and north-eastward, including the Caucasus. It was widely used by the ancient Greeks and Romans, but it was not until the Middle Ages that the variety we know today was developed. A member of the Apiaceae family—which includes carrots, celery, cumin and coriander—parsnips are usually 12 to 15 centimetres long.
